SGN EXCLUSIVE: A look inside EVO Tapas Kitchen & Cabaret

'Community,' said Todd Nordahl, owner of the soon-to-be-open EVO Tapas Kitchen & Cabaret, to Seattle Gay News. 'It's all about giving back to the community.'

That's the vision that Nordahl expressed to SGN during a sneak peak tour of the new Capitol Hill eatery, set to open May 4. The 'community' that Nordahl speaks of is not necessarily exclusively LGBT - Nordahl says his business is meant to be all-inclusive. 'Everyone is welcome,' he said. 'EVO is a place for anyone who wants to eat, drink, relax, and be entertained.'

EVO (1715 E. Olive Way) is a swank yet comfortable restaurant/cabaret space attached to the much-anticipated The Social Nightclub, and is certainly something to see. Although it is attached to the nightclub, the soundproof walls and door will keep the thumpa-thumpa noise out while containing the lounge, jazz, or cabaret music (performed by local entertainers and DJs) in. Even with construction incomplete, it was easy to see that EVO is a place that is poised to become a destination for Seattleites who like a little entertainment with their dinner.

'Our stage showcases a wide array of talent weekly, ranging anywhere from chill lounge DJs to extravagant burlesque performances and everything in between,' said Nordahl.

Seattle newcomer Colby Barnes will handle marketing and events management for the new space. During our conversation on-site, Barnes told SGN that EVO is all about the 'synergy of, not only the surrounding businesses, but the Social Nightclub and EVO as well. We are creating an atmosphere that is a one-stop shop.'

The menu looks affordable and, quite frankly, delicious. 'Our tapas bring alive the gourmet tastes of the Mediterranean including countries such as Greece, France, Portugal, Italy, Morocco, and Spain, creating mouthwatering dishes that cater to groups of any size,' promises Nordahl in a statement on the EVO website, www.evo-seattle.com. 'We've crafted signature artisan cocktails, specialty sangrias, and a wine list with unique and exotic varietals.'

Artistic and innovative chef David K. Leopoldo will head the team of sous chef Dominik Zawadzki and consulting chef Khampaeng 'KP' Panyathong.

And the kitchen will be open late. Nordahl assured SGN that EVO's kitchen will remain open until 2 a.m.

EVO offers a 3,000-square-foot space that is able to accommodate groups both large and small. And, of course, there is the added bonus of having a dance club right down the hall.

The area of EVO that caught my attention the most is the outdoor patio that Nordahl and staff call an 'urban oasis.' That description is not too far off as the patio (located in front of the property, not the back) is an open-air, stained wood space that will see customers drinking, socializing, and relaxing from Pride Sunday well past July 4th and into the holiday season.

'Each day I walk into the restaurant, I am reminded how grateful I am to be able to come to this incredible place where I can laugh, relax, and be entertained in an environment of unique and individual people,' said Nordhal. His hope is that EVO customers will feel the same way. 'Whether it is a special occasion, birthday, anniversary, holiday party, or simply a night on the town, EVO Tapas Kitchen & Cabaret is the perfect venue to host your night,' he said.

According to Nordahl, from May 4 on, patrons will experience that 'EVO Tapas Kitchen & Cabaret is focused on service excellence.'

Look for announcements, advertisements, and partnerships between EVO and SGN in future issues. The staff and management at SGN wish EVO Tapas Kitchen & Cabaret a wonderful grand opening.
